Slow Cooker Beef Brisket with Potatoes

Fall-apart tender beef brisket slow-cooked with potatoes, carrots, and onions in savory broth.

Ingredients

  • 2 lb Beef Eye Round Roast (On Sale: $6.99 lb)

  • 1 bag Bowl & Basket Creamer Potatoes (On Sale: $2.99)

  • 16 oz Carrots (On Sale: 99ยข)

  • 1 large onion, quartered

  • 3 cups beef broth

  • 2 tbsp tomato paste

  • 3 cloves garlic, minced

  • 2 bay leaves

  • Salt and pepper to taste

Directions

Step 1: Season beef with salt and pepper. Brown on all sides in a skillet.

Step 2: Place beef in slow cooker.

Step 3: Add potatoes, carrots, and onion around the beef.

Step 4: Mix broth, tomato paste, and garlic. Pour over everything.

Step 5: Add bay leaves.

Step 6: Cover and cook on low for 8 hours or high for 4-5 hours until beef is fork-tender.

Step 7: Remove bay leaves.

Step 8: Slice beef and serve with vegetables and cooking liquid as gravy.
