3 Avocados (On Sale: $0.99)
1 pint Bowl & Basket Grape Tomatoes, diced (On Sale: $1.99)
8 corn tortillas
2 cans black beans, drained and rinsed
1 Sweet Onion, diced (On Sale: $0.50)
1 lime, juiced
1 tsp cumin
1 cup shredded lettuce
1/2 cup sour cream
Cilantro for garnish
Salt and pepper to taste
Step 1: Preheat oven to 400°F. Brush tortillas lightly with oil and bake 8-10 minutes until crispy.
Step 2: Meanwhile, heat black beans in a saucepan with cumin, salt, and pepper. Mash slightly if desired.
Step 3: Make guacamole: mash avocados with half the diced onion, half the tomatoes, lime juice, salt, and pepper.
Step 4: Spread warm black beans on each crispy tortilla.
Step 5: Top with generous dollops of guacamole.
Step 6: Add shredded lettuce, remaining diced tomatoes, and remaining onion.
Step 7: Drizzle with sour cream and garnish with fresh cilantro.
Step 8: Serve immediately while tortillas are still crispy.
Chef's Tip: Bake tortillas until extra crispy to prevent sogginess. Assemble just before serving.
