Spinach and Feta Stuffed Chicken Breasts

Juicy chicken breasts filled with a creamy spinach and feta mixture, baked to golden perfection.

Ingredients

  • 4 Bowl & Basket Chicken Breasts (about 1.5 lbs) (On Sale: $2.49)

  • 10 oz Organic Girl Baby Spinach (On Sale: $4.99)

  • 4 oz feta cheese, crumbled

  • 4 oz cream cheese, softened

  • 2 cloves garlic, minced

  • 2 tbsp olive oil

  • 1 tsp dried oregano

  • Salt and pepper to taste

Directions

Step 1: Preheat oven to 375°F.

Step 2: Wilt spinach in a pan over medium heat. Squeeze out excess moisture and chop.

Step 3: In a bowl, mix chopped spinach, feta, cream cheese, garlic, and oregano.

Step 4: Cut a pocket into the side of each chicken breast, being careful not to cut all the way through.

Step 5: Stuff each breast with the spinach mixture and secure with toothpicks if needed.

Step 6: Season outside of chicken with salt and pepper.

Step 7: Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken 3 minutes per side.

Step 8: Transfer skillet to oven and bake 25-30 minutes until chicken reaches 165°F.

Step 9: Let rest 5 minutes before serving.

Chef's Tip: Use toothpicks to secure the stuffing if needed. Pound chicken to even thickness for uniform cooking.
