Tender, fork-tender beef roast slow-cooked with vegetables and herbs for an easy family dinner.
2.5 lb Beef Eye Round Roast (On Sale: $6.99)
5 lb Bowl & Basket Red Potatoes, quartered (On Sale: $1.60)
1 lb Carrots, cut into chunks (On Sale: $0.99)
1 Sweet Onion, quartered (On Sale: $0.50)
2 cups beef broth
3 cloves garlic, minced
2 tbsp Worcestershire sauce
2 tsp dried thyme
2 bay leaves
Salt and pepper to taste
Step 1: Season roast generously with salt and pepper. Sear in a hot skillet on all sides until browned, about 8 minutes total.
Step 2: Place quartered potatoes, carrots, and onion in the bottom of a slow cooker.
Step 3: Place seared roast on top of vegetables.
Step 4: In a bowl, mix beef broth, garlic, Worcestershire sauce, and thyme. Pour over roast.
Step 5: Add bay leaves to the slow cooker.
Step 6: Cover and cook on low for 8 hours or high for 4-5 hours until meat is fork-tender.
Step 7: Remove bay leaves. Transfer roast to a cutting board and let rest 10 minutes.
Step 8: Slice and serve with vegetables and cooking liquid as gravy.
