Tender coffee cake studded with fresh blueberries and topped with a sweet cream cheese crumble.
2 pints Blueberries (On Sale: 2/$7)
8 oz cream cheese, softened
1 lb Bowl & Basket Butter (On Sale: 2/$7)
2 cups sugar
3 cups flour
4 eggs
2 tsp baking powder
1 tsp vanilla extract
1/2 cup milk
Step 1: Preheat oven to 350°F. Grease a 9x13 inch baking pan.
Step 2: Cream together 1/2 lb butter and 1.5 cups sugar until fluffy.
Step 3: Beat in eggs one at a time, then vanilla.
Step 4: Mix flour and baking powder. Add to butter mixture alternating with milk.
Step 5: Gently fold in 1.5 cups blueberries.
Step 6: Pour into prepared pan.
Step 7: Mix cream cheese, remaining butter, and remaining sugar for topping. Crumble over batter.
Step 8: Top with remaining blueberries.
Step 9: Bake 45-50 minutes until golden and a toothpick comes out clean.
Step 10: Cool before serving.
