Honey Garlic Pork Tenderloin with Roasted Vegetables

Juicy pork tenderloin glazed with honey garlic sauce, served alongside colorful roasted peppers and potatoes.

Ingredients

  • 1.5 lb Pork Tenderloin (On Sale: $2.99 lb)

  • 1 package Rainbow Peppers (On Sale: $3.99)

  • 1 bag Bowl & Basket Creamer Potatoes (On Sale: $2.99)

  • 3 tbsp honey

  • 3 cloves garlic, minced

  • 2 tbsp soy sauce

  • 2 tbsp olive oil

  • Salt and pepper to taste

Directions

Step 1: Preheat oven to 400°F.

Step 2: Cut peppers and potatoes into chunks and toss with 1 tbsp olive oil, salt, and pepper on a baking sheet.

Step 3: Season pork tenderloin with salt and pepper.

Step 4: Heat remaining olive oil in an oven-safe skillet over medium-high heat and sear pork on all sides, about 8 minutes total.

Step 5: Mix honey, garlic, and soy sauce. Brush half over pork.

Step 6: Transfer skillet to oven along with vegetable sheet. Roast for 20-25 minutes until pork reaches 145°F.

Step 7: Brush remaining glaze on pork during last 5 minutes.

Step 8: Let pork rest 5 minutes, then slice and serve with roasted vegetables.
