Step 1: Preheat oven to 350°F
Step 2: Place the Hatfield Texas Smokehouse Seasoned Pork Roast in a roasting pan. Cover with foil and roast for about 25–30 minutes per pound, until it reaches 145°F internal temp.
Step 3: Let it rest 10 minutes, then shred with two forks
Step 4: Toss the shredded pork with Stubb’s Smokehouse Mesquite BBQ Sauce and warm it in a pan on low for a few minutes.
Step 5: Prep the toppings - Dice golden pineapple, Chop cilantro, and Thinly slice red onion, then squeeze lime juice over it and let it sit a few minutes
Step 6: Heat the Chi-Chi’s soft taco tortillas until soft and pliable.
Step 7: Add BBQ pork, pineapple, limey red onion, and cilantro to each tortilla.
