Cheesy Broccoli Rice Casserole

Comforting one-pot side dish combining tender broccoli, fluffy rice, and melted cheese.

Ingredients

  • 1 lb Broccoli Crowns, cut into florets (On Sale: $1.49 lb)

  • 8 oz Bowl & Basket Shredded Cheese (On Sale: 3/$5)

  • 1 cup long grain rice, uncooked

  • 2 cups chicken broth

  • 1 cup milk

  • 2 tbsp butter

  • 1/2 tsp garlic powder

  • Salt and pepper to taste

Directions

Step 1: Preheat oven to 350°F. Grease a 9x13 inch baking dish.

Step 2: In large pot, bring chicken broth to boil. Add rice, reduce heat, cover and simmer 15 minutes.

Step 3: Meanwhile, blanch broccoli in boiling water for 3 minutes. Drain well.

Step 4: In same pot as rice, stir in milk, butter, garlic powder, salt, and pepper. Add broccoli and half the cheese.

Step 5: Transfer mixture to prepared baking dish. Top with remaining cheese.

Step 6: Bake uncovered for 20-25 minutes until cheese is melted and bubbly.

Chef's Tip: Blanch broccoli first to keep it bright green. Cover casserole with foil if cheese browns too quickly.
