2 lb Bowl & Basket Salmon Fillets (On Sale: $15.99)
1 lb Broccoli Crowns, cut into florets (On Sale: $1.49 lb)
1 pt Bowl & Basket Grape Tomatoes (On Sale: $1.99)
3 tbsp Filippo Berio Extra Virgin Olive Oil (On Sale: $9.99)
2 cloves garlic, minced
1 lemon, sliced
1 tsp dried oregano
Salt and pepper to taste
Step 1: Preheat oven to 400°F. Line a large baking sheet with parchment paper.
Step 2: Toss broccoli and tomatoes with 2 tbsp olive oil, garlic, oregano, salt, and pepper. Spread on one side of the baking sheet.
Step 3: Season salmon with salt and pepper, drizzle with remaining olive oil. Place on the other side of the baking sheet.
Step 4: Top salmon with lemon slices. Roast 18-20 minutes until salmon flakes easily and vegetables are tender.
Step 5: Remove lemon slices before serving. Drizzle with additional olive oil if desired.
Chef's Tip: Check salmon doneness by inserting a fork - it should flake easily and be opaque throughout.
