16 oz John Soules Chicken Fajita Strips (On Sale: 2/$7)
3 ct Rainbow Peppers, sliced (On Sale: $3.99)
2 pouches Ben's Ready Rice (On Sale: 2/$6)
1 cup chicken broth
1 tbsp olive oil
Sour cream and cilantro for topping
Step 1: Heat olive oil in a large skillet over medium-high heat. Add chicken strips and cook 3-4 minutes until heated through.
Step 2: Add sliced peppers and sauté 3-4 minutes until slightly softened.
Step 3: Stir in ready rice, breaking it up, and add chicken broth. Bring to a simmer.
Step 4: Cover and cook 5 minutes, stirring occasionally, until rice is heated and liquid is absorbed.
Step 5: Remove from heat and let stand 2 minutes. Serve topped with sour cream and cilantro.
Chef's Tip: Let the rice rest covered for 5 minutes after cooking for perfectly fluffy results.
