12 oz Bowl & Basket Breakfast Sausage (On Sale: $2.49)
1.5 lb Bowl & Basket Creamer Potatoes, diced (On Sale: $2.99)
1 Sweet Onion, diced (On Sale: $0.50)
4 large eggs
2 tbsp olive oil
1 tsp paprika
Salt and pepper to taste
Fresh parsley for garnish
Step 1: Heat 1 tbsp oil in a large skillet over medium-high heat. Add diced potatoes, season with paprika, salt, and pepper.
Step 2: Cook potatoes 12-15 minutes, stirring occasionally, until golden and crispy. Remove and set aside.
Step 3: In the same skillet, cook sausage, breaking it up with a spoon, until browned and cooked through.
Step 4: Add diced onion and cook 3-4 minutes until softened.
Step 5: Return potatoes to the skillet and mix everything together.
Step 6: Make 4 wells in the hash and crack an egg into each well.
Step 7: Cover and cook 5-7 minutes until eggs are cooked to your liking.
Step 8: Garnish with fresh parsley and serve hot.
Chef's Tip: Use a large cast iron skillet for best browning. Make wells in the hash before adding eggs.
