Tender cod fillets baked with fresh herbs and served alongside colorful roasted peppers for a light, healthy dinner.
1.5 lb Cod Fillets (On Sale: $9.99 lb)
1 package Rainbow Peppers (On Sale: $3.99)
3 tbsp olive oil
4 cloves garlic, minced
2 tbsp fresh lemon juice
1 tsp dried oregano
Salt and pepper to taste
Step 1: Preheat oven to 400°F. Line a baking sheet with parchment paper.
Step 2: Slice peppers into thick strips and toss with 1 tbsp olive oil, salt, and pepper. Spread on one side of baking sheet.
Step 3: Pat cod fillets dry and place on the other side of baking sheet.
Step 4: Mix remaining olive oil, garlic, lemon juice, oregano, salt, and pepper. Brush over cod fillets.
Step 5: Bake for 20-25 minutes until fish flakes easily and peppers are tender.
Step 6: Serve cod topped with roasted peppers and pan juices.
