1 pint Bowl & Basket Grape Tomatoes (On Sale: $1.99)
1 lb asparagus, trimmed
3 tbsp olive oil
2 lemons, juiced and zested
4 cloves garlic, minced
Fresh parsley, chopped
Salt and pepper to taste
Step 1: Preheat oven to 425°F.
Step 2: Arrange asparagus and tomatoes on a large baking sheet.
Step 3: Place cod fillets on top of vegetables.
Step 4: Mix olive oil, lemon juice, lemon zest, and garlic. Drizzle over fish and vegetables.
Step 5: Season everything with salt and pepper.
Step 6: Bake for 15-20 minutes until fish flakes easily and vegetables are tender.
Step 7: Garnish with fresh parsley and serve immediately.
