Lemon Garlic Cod with Spring Vegetables

Flaky cod fillets baked with bright lemon and garlic, accompanied by fresh asparagus and cherry tomatoes.

Ingredients

  • 1.5 lb Cod Fillets (On Sale: $9.99 lb)

  • 1 pint Bowl & Basket Grape Tomatoes (On Sale: $1.99)

  • 1 lb asparagus, trimmed

  • 3 tbsp olive oil

  • 2 lemons, juiced and zested

  • 4 cloves garlic, minced

  • Fresh parsley, chopped

  • Salt and pepper to taste

Directions

Step 1: Preheat oven to 425°F.

Step 2: Arrange asparagus and tomatoes on a large baking sheet.

Step 3: Place cod fillets on top of vegetables.

Step 4: Mix olive oil, lemon juice, lemon zest, and garlic. Drizzle over fish and vegetables.

Step 5: Season everything with salt and pepper.

Step 6: Bake for 15-20 minutes until fish flakes easily and vegetables are tender.

Step 7: Garnish with fresh parsley and serve immediately.

Chef's Tip: Don't overcook the cod - it should flake easily with a fork when done.
