2 cups shredded cheddar cheese
3 tbsp butter
3 tbsp flour
4 cups chicken or vegetable broth
2 cups half and half
Salt and pepper to taste
Step 1: Chop broccoli into small florets and dice onion.
Step 2: Melt butter in a large pot over medium heat. Add onion and cook until soft, about 5 minutes.
Step 3: Stir in flour and cook 1 minute.
Step 4: Gradually whisk in broth, then add broccoli.
Step 5: Bring to a boil, reduce heat, and simmer 15 minutes until broccoli is tender.
Step 6: Stir in half and half and heat through without boiling.
