Mediterranean Chickpea Bowl

Healthy grain bowl packed with chickpeas, fresh vegetables, and a creamy tzatziki dressing.

Ingredients

  • 1 (12 oz) Bowl & Basket Tzatziki Yogurt Dip

  • 1 (14 oz) Mini Cucumbers, diced

  • 1 pt Bowl & Basket Grape Tomatoes, halved

  • 3 cups cooked quinoa or rice

  • 2 (15 oz) cans chickpeas, drained and rinsed

  • 1/2 red onion, diced

  • 1/4 cup crumbled feta cheese

  • 2 tbsp olive oil

  • 1 tsp dried oregano

  • Salt and pepper to taste

Directions

Step 1: Divide cooked quinoa or rice among 4 bowls.

Step 2: Toss chickpeas with olive oil, oregano, salt, and pepper.

Step 3: Arrange chickpeas, cucumbers, tomatoes, and red onion over quinoa.

Step 4: Drizzle generously with tzatziki dressing.

Step 5: Top with crumbled feta cheese.

Step 6: Serve immediately or refrigerate for meal prep.

Chef's Tip: Prepare components ahead for easy meal prep. Can be served warm or cold.
