Collard greens braised slowly with bacon and sweet onion until silky. A pot of greens improves the longer it sits.
2 bags Collard Greens
6 slices Bacon, chopped
1 Sweet Onion, diced
1 tbsp Minced Garlic
3 cups chicken broth
2 tbsp cider vinegar and red pepper flakes
Step 1: Cook the chopped bacon in a heavy pot over medium heat until the fat renders and the pieces crisp.
Step 2: Add the diced onion and cook 5 minutes until softened, then stir in the garlic.
Step 3: Add the collard greens a handful at a time, letting each addition wilt before adding more.
Step 4: Pour in the broth and add the red pepper flakes.
Step 5: Cover and simmer gently for 45 to 50 minutes until the greens are completely tender.
Step 6: Stir in the cider vinegar, season to taste, and serve with some of the pot liquor.
Chef's Tip: Add a splash of vinegar at the very end to cut through the richness and brighten the whole pot.
Save by using a package of greens and a few slices of bacon go a very long way and Serve with cornbread for mopping up the pot liquor.
