Planks of summer zucchini grilled until charred and finished with lemon and shaved Parmesan. The simplest possible use of August squash.
4 Zucchini, sliced lengthwise into planks
1 Lemon, juiced and zested
1/2 cup shaved Parmesan
2 tbsp olive oil
Salt, pepper and fresh mint
Step 1: Slice the zucchini lengthwise into half-inch planks.
Step 2: Salt them lightly and let them drain on paper towels for 10 minutes, then pat dry.
Step 3: Brush with olive oil and season with pepper.
Step 4: Grill over medium-high heat 3 to 4 minutes per side until well marked and just tender.
Step 5: Arrange on a platter and dress with the lemon juice and zest.
Step 6: Finish with shaved Parmesan and torn mint.
Chef's Tip: Salt the zucchini planks and let them drain ten minutes before grilling so they char instead of steaming.
