Plump shrimp and ribbons of summer zucchini in a bright lemon garlic butter. Light, fast and finished in a single pan.
1 lb Shrimp, peeled and deveined
3 Zucchini, sliced into half moons
2 Lemons, juiced and zested
3 tbsp Butter
1 tbsp Minced Garlic
1/4 cup grated Parmesan
Salt, pepper and red pepper flakes
Step 1: Melt 1 tablespoon of the butter in a large skillet over medium-high heat.
Step 2: Add the zucchini and cook 5 to 6 minutes until just tender and lightly browned, then move it to a plate.
Step 3: Melt the remaining butter, add the garlic, and cook 30 seconds until fragrant.
Step 4: Add the shrimp in a single layer and cook 2 minutes per side until pink and opaque.
Step 5: Return the zucchini to the pan, add the lemon juice and zest, and toss to coat.
Step 6: Season to taste, scatter the Parmesan over the top, and serve immediately.
Chef's Tip: Add the shrimp last and pull the pan off the heat the moment they curl into a C shape, or they will turn rubbery.
Save by using a two-pound bag of shrimp covers this dinner twice over and Serve with crusty bread or a bed of pasta to catch the sauce.
