Carrots simmered and glazed in honey butter until they turn glossy and just tender. A five-ingredient side that goes with almost anything.
2 lbs Carrots, cut into coins
3 tbsp Butter
3 tbsp honey
Salt, pepper and fresh thyme
Step 1: Put the carrot coins in a wide skillet with a half inch of water and a pinch of salt.
Step 2: Cover and simmer over medium heat for 8 to 10 minutes until just tender.
Step 3: Uncover and let the remaining water cook away.
Step 4: Add the butter and honey and toss to coat.
Step 5: Cook 4 to 5 minutes more, stirring often, until the carrots are glossy and lightly caramelized.
Step 6: Season with salt, pepper and thyme before serving.
Chef's Tip: Cook the carrots uncovered at the end so the liquid reduces into a glaze rather than staying watery.
