Thin chicken breast cutlets in a crisp Parmesan breadcrumb crust, finished with a squeeze of lemon. A reliable dinner that children eat without argument.
1.5 lbs Chicken Breasts, sliced into cutlets
1.5 cups Bread Crumbs
2/3 cup grated Parmesan
2 Eggs, beaten
2 Lemons, cut into wedges
1/2 cup flour
Salt, pepper and oil for frying
Step 1: Slice the chicken breasts horizontally and pound them to an even quarter-inch thickness.
Step 2: Set out three shallow dishes with seasoned flour, beaten egg, and breadcrumbs mixed with the Parmesan.
Step 3: Coat each cutlet in flour, then egg, then press firmly into the breadcrumb mixture.
Step 4: Heat a quarter inch of oil in a skillet over medium heat until it shimmers.
Step 5: Fry the cutlets 3 to 4 minutes per side until deep golden and cooked through, working in batches.
Step 6: Drain briefly on paper towels and serve with lemon wedges.
Chef's Tip: Pound the cutlets to an even thickness so they cook through before the crust has a chance to darken.
Save by using one package of breasts sliced into cutlets stretches much further than whole ones and Serve with a lemony arugula salad or buttered pasta.
