Tree-ripe peaches and plump blueberries bubbling under a buttery oat topping. The most that late-summer fruit can be asked to do.
5 Peaches, sliced
1 pint Blueberries
1 stick Butter, cold and cubed
1 cup rolled oats
3/4 cup flour
3/4 cup brown sugar
1 tbsp cornstarch and 1 tsp cinnamon
Step 1: Preheat the oven to 350 degrees F and butter a 9x13 baking dish.
Step 2: Toss the sliced peaches and blueberries with the cornstarch and half the cinnamon, then spread in the dish.
Step 3: Combine the oats, flour, brown sugar and remaining cinnamon in a bowl.
Step 4: Cut the cold butter into the dry mixture with your fingers until it forms coarse crumbs.
Step 5: Scatter the topping evenly over the fruit.
Step 6: Bake 40 to 45 minutes until the topping is deep golden and the fruit bubbles at the edges.
Chef's Tip: Toss the fruit with a spoonful of cornstarch so the juices thicken into a syrup instead of running thin.
Save by using peaches and blueberries are both at their peak and priced accordingly and Serve with a scoop of vanilla ice cream while it is still warm.
