Everything roasts on one pan: sale-priced chicken thighs glazed in barbecue sauce with red potatoes, carrots and sweet onion. A full family dinner with almost no cleanup.
3 lbs Chicken Thighs or Drumsticks
2 lbs Red Potatoes, quartered
1 lb Carrots, cut into chunks
1 large Sweet Onion, wedged
3/4 cup Barbecue Sauce
2 tbsp Butter, melted
2 tbsp olive oil
Salt and pepper to taste
Step 1: Preheat the oven to 425 degrees F and line a large sheet pan.
Step 2: Toss the potatoes, carrots and onion with olive oil, salt and pepper, then spread on the pan and roast 10 minutes.
Step 3: Pat the chicken dry, season it, and nestle it among the vegetables.
Step 4: Roast 25 minutes, then brush the chicken generously with barbecue sauce.
Step 5: Return to the oven for 10 to 15 minutes until the chicken reaches 175 degrees F and the glaze has set.
Step 6: Drizzle the melted butter over the vegetables and serve straight from the pan.
Chef's Tip: Toss the potatoes and carrots in oil and start them ten minutes before the chicken so everything finishes at the same time.
Save by using bone-in thighs cost far less than breasts and stay juicier on a sheet pan and Serve with a crisp bagged salad.
