Pork butt slow-cooked with lime and spices, then crisped under the broiler and piled into taco shells with all the trimmings.
4 lbs Boneless Pork Butt, cubed
18 Taco Shells
1 packet Taco Seasoning Mix
3 Limes
1 Sweet Onion, diced
1 cup Sour Cream
1.5 cups Shredded Cheese
Salt, pepper and cumin
Step 1: Toss the cubed pork with the taco seasoning, cumin, salt and pepper.
Step 2: Put it in the slow cooker with the diced onion and the juice of two limes.
Step 3: Cover and cook on low for 8 hours until completely tender.
Step 4: Shred the pork and spread it on a sheet pan with a little of the cooking liquid.
Step 5: Broil 5 to 7 minutes until the edges are crisp and browned.
Step 6: Warm the taco shells and fill them with the carnitas, sour cream, shredded cheese and a squeeze of lime.
Chef's Tip: The broiler step is what separates carnitas from plain shredded pork, so do not skip crisping the edges.
Save by using one pork butt makes enough for taco night twice and Serve with lime wedges, sour cream and shredded cheese.
