Smoked rope sausage browned and simmered into baked beans with onion and a little barbecue sauce. A one-skillet supper with almost nothing to it.
1 Smoked Rope Sausage, sliced into coins
2 cans Baked Beans
1 Sweet Onion, diced
1/3 cup Barbecue Sauce
2 tbsp brown sugar
1 tbsp yellow mustard
Step 1: Brown the sausage coins in a large skillet over medium-high heat for 5 to 6 minutes until well caramelized.
Step 2: Add the diced onion and cook 4 minutes until softened.
Step 3: Stir in the baked beans, barbecue sauce, brown sugar and mustard.
Step 4: Simmer 12 to 15 minutes, stirring occasionally, until thickened.
Step 5: Let it rest a few minutes off the heat before serving.
Chef's Tip: Brown the sausage coins hard on both sides first, since that fond is the whole backbone of the dish.
Save by using one rope of sausage and a can of beans feeds a family for very little and Serve with cornbread or a slice of buttered white bread.
