Boneless pork butt cooked low and slow until it shreds with a fork, piled onto potato rolls with barbecue sauce. Almost no active work for a very large payoff.
4 lbs Boneless Pork Butt
1 cup Barbecue Sauce
1 large Sweet Onion, sliced
12 Potato Rolls
2 tbsp brown sugar and paprika
Salt and pepper to taste
Step 1: Rub the pork all over with brown sugar, paprika, salt and pepper.
Step 2: Scatter the sliced onion across the bottom of the slow cooker and set the pork on top.
Step 3: Cover and cook on low for 8 hours until the meat pulls apart easily.
Step 4: Shred the pork with two forks, discarding any large pieces of fat.
Step 5: Stir the barbecue sauce through the shredded meat and its juices.
Step 6: Pile onto the potato rolls and serve.
Chef's Tip: Resist lifting the lid while it cooks, and shred the pork directly in the cooking juices so it stays moist.
