A boneless Delmonico steak grilled to a deep crust and topped with a fresh salsa of tree-ripe peaches, sweet onion and lime. Late-summer steakhouse cooking at home.
2 lbs Boneless Delmonico Steak
3 Peaches, diced
1/2 Sweet Onion, finely diced
1 Lime, juiced
1 tbsp Butter
2 tbsp chopped fresh herbs
Salt, pepper and olive oil
Step 1: Combine the diced peaches, sweet onion, lime juice and herbs in a bowl and season with salt, then set aside.
Step 2: Let the steak sit at room temperature 20 minutes, then rub it with olive oil and season generously.
Step 3: Heat the grill to high and sear the steak 5 to 6 minutes per side for medium-rare.
Step 4: Move the steak to a board, top it with the butter, and tent it loosely for 10 minutes.
Step 5: Slice against the grain and spoon the peach salsa over the top.
Chef's Tip: Pull the steak off the grill about five degrees below your target and let it rest ten minutes so the juices redistribute.
