Thick-cut deli ham and sharp cheese pressed between buttered bread until the crust shatters and the cheese runs.

8 slices Sharp Cheese
4 tbsp Butter, softened
2 tbsp mustard
Step 1: Butter one side of each slice of bread.
Step 2: Spread mustard on the unbuttered sides of four slices.
Step 3: Layer the ham and cheese onto those slices and close the sandwiches with the remaining bread, buttered side out.
Step 4: Cook in a skillet over medium-low heat for 4 to 5 minutes until deep golden.
Step 5: Flip carefully and cook 4 minutes more until the cheese has fully melted.
Step 6: Cut on the diagonal and serve hot.
Chef's Tip: Butter the outside of the bread rather than the pan and cook it low and slow so the cheese melts before the crust burns.
