Strips of chicken breast seared with three colors of bell pepper and sweet onion, finished with lime. One skillet, on the table in half an hour.
1.5 lbs Chicken Breasts, sliced into strips
3 Bell Peppers, sliced
1 large Sweet Onion, sliced
1 packet Fajita Seasoning Mix
2 Limes, cut into wedges
1/2 cup Sour Cream
1 cup Shredded Cheese
2 tbsp vegetable oil
Step 1: Toss the chicken strips with the seasoning mix and let them sit 10 minutes.
Step 2: Heat the oil in a large skillet over medium-high until it shimmers.
Step 3: Sear the chicken in a single layer without moving it for 3 minutes, then stir and cook 3 minutes more until browned through.
Step 4: Add the peppers and onion and cook 5 to 6 minutes until crisp-tender and lightly charred.
Step 5: Squeeze lime wedges over the skillet and serve with sour cream and shredded cheese.
Chef's Tip: Get the skillet properly hot before the peppers go in so they char at the edges instead of steaming.
