Colorful bell peppers filled with seasoned rice, tomatoes, and feta cheese for a healthy dinner.
4 Green Bell Peppers (On Sale: $1.99 lb)
1 cup Minute Rice, cooked (On Sale: 2/$5)
6 oz President Crumbled Feta Cheese (On Sale: $5.99)
1 can diced tomatoes
1/2 cup Kalamata olives, chopped
2 cloves garlic, minced
1 tsp dried oregano
2 tbsp olive oil
Salt and pepper to taste
Step 1: Preheat oven to 375°F. Cut tops off peppers and remove seeds and membranes.
Step 2: In a bowl, combine cooked rice, diced tomatoes (drained), chopped olives, garlic, oregano, half the feta, olive oil, salt, and pepper.
Step 3: Stuff each pepper with rice mixture and place in a baking dish. Add 1/2 inch water to bottom of dish.
Step 4: Cover with foil and bake 35 minutes.
Step 5: Remove foil, top peppers with remaining feta, and bake uncovered 5 more minutes.
Step 6: Let cool slightly before serving.
Chef's Tip: Blanch peppers in boiling water for 3-4 minutes before stuffing to help them cook more evenly.
