2 Avocados, diced (On Sale: 4/$5)
1 small red onion, diced
1 jalapeño, seeded and minced
Juice of 2 limes
1/4 cup cilantro, chopped
Salt to taste
Step 1: Cook corn in boiling water for 5 minutes or grill until tender. Let cool.
Step 2: Cut kernels off the cobs and place in a large bowl.
Step 3: Add diced avocados, red onion, and jalapeño.
Step 4: Squeeze lime juice over the mixture.
Step 5: Add chopped cilantro and salt to taste.
Step 6: Gently toss to combine and serve immediately or refrigerate until ready to serve.
