8 oz Bowl & Basket Cream Cheese (On Sale: 2/$3)
6-8 oz Kraft Shredded Cheese (On Sale: $1.99)
16 oz Hatfield Bacon (On Sale: $4.99)
4 cups chicken broth
1 cup heavy cream
3 green onions, chopped
Salt and pepper to taste
Step 1: Cook bacon in a large pot until crispy. Remove and crumble, reserving 2 tablespoons of bacon grease in pot.
Step 2: Peel and cube potatoes. Add to pot with bacon grease and sauté for 5 minutes.
Step 3: Add chicken broth and bring to a boil. Reduce heat and simmer until potatoes are tender, about 15 minutes.
Step 4: Use a potato masher to mash some of the potatoes, leaving some chunks.
Step 5: Stir in cream cheese until melted, then add heavy cream and shredded cheese.
Step 6: Season with salt and pepper. Simmer for 5 more minutes until thickened.
Step 7: Serve topped with crumbled bacon, extra cheese, and green onions.
Chef's Tip: Use an immersion blender to partially blend for creamier texture. Top with extra bacon and chives.
