Greek Chicken Bowls with Tzatziki

Marinated grilled chicken served over rice with fresh vegetables, feta, and creamy tzatziki sauce.

Ingredients

  • 2 lbs Bowl & Basket Chicken Breasts (On Sale: $2.99 lb)

  • 2 containers Ben's Ready Rice (On Sale: 2/$5)

  • 2 Cucumbers, diced (On Sale: 2/$1)

  • 1 cup Greek yogurt

  • 2 cloves garlic, minced

  • 2 tbsp lemon juice

  • 1/4 cup olive oil

  • 1 tsp dried oregano

  • 1/2 cup crumbled feta cheese

  • Cherry tomatoes, halved

  • Salt and pepper to taste

Directions

Step 1: Whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.

Step 2: Marinate chicken breasts for 30 minutes.

Step 3: Grill chicken 6-7 minutes per side until cooked through; slice.

Step 4: Make tzatziki: combine Greek yogurt, grated cucumber (squeezed dry), garlic, and lemon juice.

Step 5: Heat ready rice according to package directions.

Step 6: Assemble bowls: rice, grilled chicken, cucumbers, tomatoes, feta, and tzatziki.

Chef's Tip: Marinate chicken for at least 30 minutes or up to overnight for maximum flavor.
