1 lb Imported Cherries, pitted (On Sale: $3.99 lb)
1/4 cup balsamic vinegar
2 tbsp honey
2 tbsp olive oil
Salt and pepper to taste
Step 1: Preheat oven to 400°F.
Step 2: Season pork tenderloin with salt and pepper.
Step 3: Heat olive oil in an oven-safe skillet over medium-high heat.
Step 4: Sear pork on all sides until browned, about 8 minutes total.
Step 5: Transfer skillet to oven and roast for 15-18 minutes until internal temperature reaches 145°F.
Step 6: Meanwhile, combine cherries, balsamic vinegar, and honey in a saucepan. Simmer 10 minutes until thickened.
Step 7: Slice pork and serve with cherry glaze.
