Crispy baked potato skins loaded with cheese, bacon, and sour cream for the ultimate appetizer.
4 lb Bowl & Basket Red Potatoes (On Sale: $4.99)
1 package Hatfield Bacon (On Sale: $4.99)
1 container Bowl & Basket Sour Cream (On Sale: 3/$5)
1 cup shredded cheddar cheese
2 green onions, sliced
Salt and pepper to taste
Step 1: Preheat oven to 400°F. Bake potatoes until tender, about 45 minutes. Let cool.
Step 2: Meanwhile, cook bacon until crispy. Crumble when cooled.
Step 3: Cut cooled potatoes in half lengthwise. Scoop out most of the flesh, leaving 1/4 inch shell.
Step 4: Brush potato skins with oil, season with salt and pepper. Bake 10 minutes until crispy.
Step 5: Fill each skin with cheese and crumbled bacon. Bake 5 more minutes until cheese melts.
Step 6: Top with sour cream and green onions. Serve hot.
