8 oz Bowl & Basket Shredded Cheese (On Sale: $1.99)
4 cups chicken broth
1 cup milk
3 slices bacon, cooked and crumbled (optional)
2 tbsp butter
Chopped chives, salt and pepper to taste
Step 1: Peel and dice potatoes into 1-inch cubes. Place in a large pot with chicken broth.
Step 2: Bring to a boil, then reduce heat and simmer for 15-20 minutes until potatoes are tender.
Step 3: Mash about half the potatoes in the pot with a potato masher, leaving some chunks for texture.
Step 4: Stir in butter, milk, and sour cream. Heat through but do not boil.
Step 5: Season with salt and pepper. Serve topped with shredded cheese, crumbled bacon, and chives.
Chef's Tip: Leave some potato chunks for texture. For a thicker soup, mash more of the potatoes. Add bacon at the end to keep it crispy.
