Tender beef strips with crisp vegetables in a savory ginger-soy sauce. A quick and flavorful weeknight dinner.
1.5 lb Bottom Round London Broil, thinly sliced (On Sale: $6.99 lb)
8.8 oz Minute Rice Ready to Serve (On Sale: 2/$4)
3 tbsp soy sauce
2 tbsp fresh ginger, minced
3 cloves garlic, minced
2 cups mixed vegetables (broccoli, bell peppers, snap peas)
2 tbsp vegetable oil
1 tbsp cornstarch
1/4 cup beef broth
Step 1: Mix soy sauce, beef broth, and cornstarch in a small bowl. Set aside.
Step 2: Heat 1 tablespoon oil in a large wok or skillet over high heat. Stir-fry beef in batches until browned, about 2 minutes per batch. Remove and set aside.
Step 3: Add remaining oil and stir-fry vegetables for 3-4 minutes until crisp-tender. Add ginger and garlic, cook 30 seconds.
Step 4: Return beef to the pan. Pour in sauce mixture and stir until thickened, about 1 minute.
Step 5: Heat ready rice according to package directions. Serve stir-fry over rice.
