One-Pot Chicken and Rice

Tender chicken thighs cooked with seasoned rice and vegetables in one pot. A complete, easy weeknight meal.

Ingredients

  • 2 lb Bowl & Basket Chicken Thighs (On Sale: $1.49 lb)

  • 17.3 oz Ben's Family Size Ready Rice (On Sale: $4.99)

  • 1 oz Old Bay Seasoning (On Sale: $4.99)

  • 3 cups chicken broth

  • 1 onion, diced

  • 2 carrots, diced

  • 2 tbsp olive oil

  • Salt and pepper to taste

Directions

Step 1: Season chicken thighs with Old Bay seasoning, salt, and pepper.

Step 2: Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown chicken thighs on both sides, about 4 minutes per side. Remove and set aside.

Step 3: In the same pot, sauté onion and carrots until softened, about 5 minutes.

Step 4: Add rice and chicken broth. Stir to combine. Nestle chicken thighs into the rice mixture.

Step 5: Bring to a boil, then reduce heat to low, cover, and simmer for 25 minutes until rice is tender and chicken is cooked through.

Step 6: Let rest 5 minutes before serving.

Chef's Tip: Don't lift the lid during cooking to ensure the rice steams properly. Let it rest for 5 minutes before serving for fluffy rice.
