1.5 lbs Perdue Chicken Breasts, sliced into strips (On Sale: $3.49 lb)
2 packets Old El Paso Fajita Seasoning Mix (On Sale: $0.99)
3 bell peppers, sliced
1 large onion, sliced
2 cups cooked rice
2 tbsp vegetable oil
Optional toppings: sour cream, shredded cheese, salsa, cilantro
Step 1: Toss chicken strips with 1 packet of fajita seasoning and let marinate for 10 minutes.
Step 2: Heat 1 tbsp oil in a large skillet over high heat. Cook chicken until browned and cooked through, about 6-8 minutes. Remove to a plate.
Step 3: Add remaining oil to skillet. Cook peppers and onions with remaining seasoning packet until tender and slightly charred, about 8 minutes.
Step 4: Return chicken to skillet and toss to combine.
Step 5: Serve chicken and vegetable mixture over rice with desired toppings.
Chef's Tip: Use high heat for the chicken and peppers to get nice charred edges. Set up a fajita bar with toppings so everyone can customize their bowl.
