16.9 oz Filippo Berio Extra Virgin Olive Oil (On Sale: $6.99)
1 lb pasta (penne or fusilli)
4 cloves garlic, minced
1/2 cup kalamata olives, sliced
1 cup crumbled feta cheese
Fresh basil, red pepper flakes, salt and pepper to taste
Step 1: Cook pasta according to package directions. Reserve 1 cup pasta water before draining.
Step 2: While pasta cooks, heat olive oil in a large skillet over medium heat. Sauté mushrooms until golden, about 5 minutes.
Step 3: Add garlic and cook until fragrant, about 1 minute. Add cherry tomatoes and cook until they start to burst, about 5 minutes.
Step 4: Toss cooked pasta with the vegetable mixture. Add olives and a splash of pasta water if needed to create a light sauce.
Step 5: Remove from heat and stir in feta cheese. Season with salt, pepper, and red pepper flakes. Garnish with fresh basil.
