Mummy Meatball Lasagna Roll-Ups

Cheesy beef-and-ricotta lasagna rolls wrapped in mozzarella 'bandages' for a playful Halloween-week pasta dinner.

Ingredients

  • 1 lb 73% Lean Ground Beef (from 5 lb chub) (On Sale: $19.99)

  • 1 box Barilla Lasagna Noodles (On Sale: 2/$5)

  • 1 jar Ragu Pasta Sauce (On Sale: 2/$5)

  • 1 container Polly-O Ricotta Cheese (On Sale: $3.99)

  • 1 cup shredded mozzarella, for mummy wraps

  • 1 egg

  • 1 tsp Italian seasoning

  • 2 sliced olives, for eyes

Directions

Step 1: Cook lasagna noodles per package directions; brown ground beef and mix with ricotta, egg, and Italian seasoning.

Step 2: Lay noodles flat, spread with the beef-ricotta mixture, and roll up.

Step 3: Place rolls in a baking dish with half the Ragu sauce underneath; top rolls with remaining sauce.

Step 4: Lay thin strips of shredded mozzarella across each roll like mummy wrappings, leaving a gap for two olive-slice eyes.

Step 5: Bake at 375°F for 25-30 minutes until bubbly and cheese is melted.

Chef's Tip: Lay the mozzarella strips loosely so they melt into a wrinkled, bandage-like look.
