Boyer's shrimp ring served in a carved pumpkin with a fresh mango-tomato cocktail sauce — a festive Halloween-week appetizer that's as fun to look at as it is to eat.

Ingredients

  • 1 Bowl & Basket Shrimp Ring (10 oz) (On Sale: $6)

  • 1 Fresh Mango, diced (On Sale: 10/$10)

  • 1/2 lb Beefsteak Tomato, diced (On Sale: $1.49 lb)

  • 1 lime, juiced

  • 2 tbsp fresh cilantro, chopped

  • 1 tbsp ketchup

  • hot sauce to taste

Directions

Step 1: Carve a small pumpkin into a bowl shape and chill.

Step 2: Combine diced mango, tomato, lime juice, cilantro, ketchup, and hot sauce for a fresh cocktail sauce.

Step 3: Arrange the shrimp ring inside or around the pumpkin bowl.

Step 4: Spoon the mango-tomato sauce into the pumpkin center for dipping and serve chilled.

Chef's Tip: Hollow out a small pumpkin ahead and chill it so it's frosty-cold when you nestle the shrimp ring inside for the party table.
