Summer Berry Lemonade Icebox Cake

A stunning no-bake dessert perfect for hot July days, layering cookies, cream, and fresh summer berries.

Ingredients

  • 1 pkg Fresh Baked Cookies (On Sale: $3.99)

  • 1 lb Strawberries (On Sale: $2.99)

  • 1 pint Organic Blueberries (On Sale: $2.99)

  • 2 cups heavy whipping cream

  • 1/4 cup powdered sugar

  • 1 tsp vanilla extract

  • 2 tbsp lemon juice

Directions

Step 1: Slice strawberries. Set aside some berries for garnish.

Step 2: Whip heavy cream with powdered sugar, vanilla, and lemon juice until stiff peaks form.

Step 3: In a 9x9 pan, layer cookies on the bottom. Spread half the whipped cream over cookies.

Step 4: Top with half the strawberries and blueberries. Add another layer of cookies, remaining cream, and remaining berries.

Step 5: Cover and refrigerate at least 4 hours or overnight.

Step 6: Garnish with reserved berries before serving.

Chef's Tip: The longer this chills, the better it gets—overnight is ideal. The cookies soften into cake-like layers.
