An elegant yet surprisingly easy seafood pasta that showcases sweet bay scallops in a luxurious garlic-butter sauce. Perfect for a special summer dinner.
16 oz Bay Scallops (On Sale: $5.99)
12 oz Ronzoni Linguine (On Sale: $0.99)
1 Lemon, juiced and zested (On Sale: 2/$1)
4 tbsp butter
4 cloves garlic, minced
1/2 cup white wine
1/4 cup fresh parsley, chopped
Red pepper flakes
Step 1: Cook linguine according to package directions. Reserve 1 cup pasta water before draining.
Step 2: Pat scallops very dry with paper towels and season with salt and pepper.
Step 3: Heat 2 tbsp butter in a large skillet over medium-high heat.
Step 4: Sear scallops 1-2 minutes per side until golden. Remove to a plate.
Step 5: In the same pan, add garlic and red pepper flakes. Cook 30 seconds.
Step 6: Add white wine, scraping up browned bits. Simmer 2 minutes.
Step 7: Add remaining butter, lemon juice and zest. Stir until butter melts.
Step 8: Add drained pasta and toss with sauce, adding pasta water as needed.
Step 9: Return scallops to pan with parsley. Toss gently and serve immediately.
Chef's Tip: Don't overcook scallops—they cook in just 2-3 minutes and should be translucent in the center. Pat them very dry before cooking for best searing.
