5 lb Bowl & Basket Red Potatoes, quartered (On Sale: $4.99)
16 oz Bagged Carrots, cut into chunks (On Sale: $0.99)
2 tbsp olive oil
1 tsp dried rosemary
Salt and pepper to taste
Step 1: Preheat oven to 425°F. Line a large sheet pan with parchment paper.
Step 2: Toss potatoes and carrots with olive oil, rosemary, salt, and pepper. Spread on sheet pan.
Step 3: Place pork tenderloin in the center of the vegetables.
Step 4: Roast for 20-25 minutes until pork reaches 145°F internal temperature and vegetables are tender.
