Easy Weeknight Chicken & Rice Skillet

A simple one-pan dinner featuring tender chicken thighs simmered with seasoned rice and vegetables. Perfect for busy families looking for a budget-friendly meal.

Ingredients

  • 1.5 lb Bowl & Basket Chicken Thighs (On Sale: $1.49 lb)

  • 2 pk Ben's Ready Rice (On Sale: 2/$5)

  • 1 can Hunt's Tomatoes (On Sale: $1.99)

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • Salt and pepper to taste

Directions

Step 1: Season chicken thighs with salt, pepper, and garlic powder.

Step 2: Heat olive oil in a large skillet over medium-high heat. Brown chicken on both sides, about 4 minutes per side.

Step 3: Add tomatoes and bring to a simmer. Reduce heat to medium-low, cover, and cook for 20 minutes.

Step 4: Prepare ready rice according to package directions.

Step 5: Serve chicken and sauce over rice.

Chef's Tip: Use bone-in thighs for extra flavor and moisture. The bones add richness to the rice as it cooks.
