These festive tacos celebrate Independence Day week with spicy shrimp, creamy slaw, and a refreshing sweet watermelon salsa that's perfect for summer.
1 lb Bowl & Basket Raw EZ Peel Shrimp, peeled (On Sale: $14.99)
2 cups diced Whole Seedless Watermelon (On Sale: $4.99)
8 corn or flour tortillas
1 cup shredded cabbage
2 tbsp mayonnaise
1 lime, juiced and zested
1 tsp chili powder
1/4 cup chopped fresh cilantro
Step 1: Make watermelon salsa: dice watermelon, mix with half the cilantro, lime juice, and a pinch of salt. Refrigerate.
Step 2: Toss shrimp with chili powder, lime zest, salt, and pepper.
Step 3: Heat oil in a skillet over medium-high. Cook shrimp 2-3 minutes per side until pink.
Step 4: Mix shredded cabbage with mayonnaise and remaining cilantro for slaw.
Step 5: Warm tortillas in a dry skillet.
Step 6: Assemble tacos: tortilla, slaw, shrimp, watermelon salsa.
Step 7: Serve immediately with lime wedges.
