Tomato Soup with Grilled Cheese Dippers

A can of hearty soup dressed up with cream and fresh basil, served with skinny grilled cheese soldiers cut for dunking. Comfort on a cool September evening.

Ingredients

  • 2 cans (18-19 oz each) Progresso Traditional or Rich & Hearty Soup, tomato variety (On Sale: BOGO<br>FREE)

  • 6 slices Clearfield White American Cheese (On Sale: $5.99 lb)

  • 8 slices Schmidt Italian Bread (On Sale: $2.99)

  • 4 tablespoons butter, softened (On Sale: 2/$5)

  • 1/3 cup heavy cream

  • 2 tablespoons chopped fresh basil

  • 1/4 teaspoon black pepper

Directions

Step 1: Pour the soup into a saucepan and warm it over medium heat until it just begins to steam.

Step 2: Butter one side of every slice of bread.

Step 3: Build four sandwiches with the cheese between them, butter side facing out.

Step 4: Griddle the sandwiches in a skillet over medium heat, about 4 minutes per side, until golden and melted.

Step 5: Stir the cream and black pepper into the hot soup and take it off the heat.

Step 6: Cut each sandwich into three narrow fingers.

Step 7: Ladle the soup into bowls, scatter the basil over top, and stand the dippers alongside.

Chef's Tip: A splash of cream and a knob of butter stirred into canned tomato soup off the heat rounds off the acidity and makes it taste like it simmered all afternoon. Cut the grilled cheese into narrow fingers rather than triangles, because they hold together better going into a bowl. Toast a pinch of dried basil in the butter first to bloom the flavor.
