1 lb Mrs. B's Seafood Salad (On Sale: $5.99 lb)
4 split-top rolls or 8 slices Schmidt Italian Bread (On Sale: $2.99)
2 tablespoons butter, softened (On Sale: 2/$5)
4 leaves crisp green lettuce (On Sale: $1.79 each)
1 lemon, cut into wedges (On Sale: $6.99)
1 stalk celery, sliced very thin
1/4 teaspoon black pepper
Step 1: Butter the cut sides of the rolls and toast them in a dry skillet until golden.
Step 2: Fold the sliced celery and black pepper into the seafood salad for a little crunch.
Step 3: Lay a lettuce leaf inside each toasted roll.
Step 4: Pile the seafood salad generously on top of the lettuce.
Step 5: Squeeze a lemon wedge over each sandwich just before serving.
Chef's Tip: Toast the cut sides of the rolls in a little butter, which builds a barrier that keeps the bread from going soggy under the salad.
