1 lb 80% Lean Fresh Ground Chuck (On Sale: $4.99 lb)
6 oz Cooper Sharp Cheese, shredded (On Sale: $5.99 lb)
1 small onion, diced (On Sale: 2/$7)
1 can (15 oz) black beans, drained and rinsed
2 cups cooked rice (On Sale: 2/$4)
2 teaspoons chili powder
1 teaspoon ground cumin
1/2 teaspoon garlic powder
1/2 teaspoon salt
1 cup shredded lettuce and 1 diced tomato, for topping
Step 1: Heat a large skillet over medium high and add the ground chuck in one flat layer.
Step 2: Let it sit undisturbed for 4 minutes to brown, then break it apart with a wooden spoon.
Step 3: Add the onion and cook for 4 minutes more, until softened and translucent.
Step 4: Drain off the excess fat, leaving a thin film in the pan.
Step 5: Stir in the chili powder, cumin, garlic powder, salt, and a splash of water, and simmer for 3 minutes.
Step 6: Fold in the black beans and heat through.
Step 7: Spoon the rice into bowls, top with the beef mixture, and finish with the shredded cheese, lettuce, and tomato.
Chef's Tip: Eighty percent lean ground chuck brings enough fat to carry the spices, so drain off only the excess and leave a little behind for flavor. Let the meat sit undisturbed for a few minutes after it hits the pan to build a browned crust before you break it up. A splash of water with the seasoning helps it cling to the beef instead of scorching on the pan.
