Shrimp Scampi with Linguine

Cooked shrimp tossed with garlic, butter, and lemon over Buitoni pasta. Dinner on the table in the time it takes the water to boil.

Ingredients

  • 1 lb Bowl & Basket Cooked Shrimp, thawed and tails removed (On Sale: $14.99)

  • 9 oz Buitoni Pasta, linguine or fettuccine (On Sale: 5/$5)

  • 6 tablespoons butter (On Sale: 2/$5)

  • 6 cloves garlic, thinly sliced (On Sale: 2/$6)

  • 1/2 cup dry white wine or chicken broth

  • 1 lemon, juiced (On Sale: $6.99)

  • 1/4 teaspoon red pepper flakes

  • 1/4 cup chopped fresh parsley

  • 1/2 teaspoon salt

Directions

Step 1: Boil the pasta in well-salted water until just al dente, then reserve half a cup of the water and drain.

Step 2: Melt the butter in a wide skillet over medium heat while the pasta cooks.

Step 3: Add the sliced garlic and red pepper flakes and cook gently for 2 minutes, until fragrant but not browned.

Step 4: Pour in the wine and simmer for 3 minutes to cook off the sharpness.

Step 5: Add the drained pasta and a splash of the reserved water, tossing until the sauce coats every strand.

Step 6: Fold in the shrimp and warm for 1 minute, just until heated through.

Step 7: Take the pan off the heat, add the lemon juice, parsley, and salt, and toss once more before serving.

Chef's Tip: The shrimp are already cooked, so they go in at the very end for barely a minute. Any longer and they tighten into rubber. Build the sauce while the pasta boils and reserve a half cup of pasta water, which emulsifies the butter and wine into something that clings rather than pools. A final squeeze of lemon off the heat keeps the brightness sharp.
